Juicy grilled chicken skewers paired with sweet pineapple chunks and a savory teriyaki glaze, perfect for summer BBQs and quick weeknight dinners.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1.5-inch cubes
  • 2 cups fresh pineapple chunks (or canned pineapple chunks in juice)
  • 1/2 cup teriyaki sauce (e.g., Kikkoman brand)
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame oil
  • Green onions, thinly sliced for garnish (optional)
  • Wooden skewers, soaked in water for 30 minutes before grilling

Instructions

  1. In a medium bowl, whisk together 1/2 cup teriyaki sauce, 2 tablespoons soy sauce, 1 tablespoon honey, minced garlic, grated ginger, and 1 teaspoon sesame oil to prepare the marinade.
  2. Cut chicken breasts into 1.5-inch cubes and peel and cut fresh pineapple into similar-sized chunks.
  3. Add chicken and pineapple chunks to the marinade, toss gently to coat, cover, and refrigerate for 20-30 minutes.
  4. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  5. Thread chicken and pineapple pieces alternately onto each skewer, leaving space for even cooking.
  6. Preheat grill to medium-high heat (375-400°F). Lightly oil the grill grates.
  7. Grill skewers for 4-5 minutes per side, turning carefully with tongs, until chicken reaches an internal temperature of 165°F (74°C) and pineapple is caramelized.
  8. Remove skewers from grill and let rest for 5 minutes.
  9. Garnish with sliced green onions before serving.

Notes

Soak wooden skewers for at least 30 minutes before grilling to prevent burning. Marinate chicken and pineapple for no longer than 30 minutes to avoid mushy texture from pineapple enzymes. Use tongs to turn skewers to keep juices intact. Rest skewers after grilling for juicy results. For a spicier version, add red pepper flakes or chili paste to the marinade. Broiling is an alternative cooking method if no grill is available.
