  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, finely minced
  • 1 tablespoon fresh rosemary, chopped (or dried rosemary)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt to taste (about 1 teaspoon)
  • Black pepper to taste (about ½ teaspoon)
  • 1 cup plain full-fat Greek yogurt (about 240 ml)
  • 2 tablespoons harissa paste
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon fresh mint, finely chopped (optional)

Instructions

  1. Pat the lamb chops dry with paper towels and trim any excess fat. Place in a medium bowl.
  2. In a small bowl, whisk together olive oil, minced garlic, chopped rosemary, ground cumin, smoked paprika, salt, and black pepper until fragrant.
  3. Pour the marinade over the lamb lollipops and toss gently to coat evenly. Cover and refrigerate for at least 20 minutes, up to 2 hours.
  4. In another bowl, combine Greek yogurt, harissa paste, lemon juice, and chopped mint if using. Stir until smooth and creamy. Adjust seasoning as needed and chill.
  5. Preheat grill or grill pan over medium-high heat for about 5 minutes. Lightly oil the grates if using a grill.
  6. Grill lamb lollipops bone side down for 2-3 minutes to get grill marks. Flip and grill another 2-3 minutes for medium-rare (internal temp 135°F/57°C). Adjust time for desired doneness.
  7. Transfer lamb to a plate, cover loosely with foil, and let rest for 5 minutes.
  8. Serve lamb lollipops warm with harissa yogurt dip on the side. Garnish with extra mint or lemon wedges if desired.

Notes

Bring lamb to room temperature before grilling for even cooking. Use tongs to flip to avoid piercing meat. Avoid over-marinating to prevent mushy texture. Let lamb rest after grilling to retain juices. Adjust harissa paste amount to control spice level.
