Instructions

  1. Prepare the Firecracker Sauce: In a medium bowl, whisk together mayonnaise, sriracha, honey, lime juice, and minced garlic until smooth. Adjust heat or sweetness as desired. Refrigerate while prepping other ingredients.
  2. Prep the Toppings: Rinse and halve cherry tomatoes. Shred cabbage finely. Crumble blue cheese if using. Chop cilantro leaves for garnish. Slice pickled jalapeños thinly if desired.
  3. Cook the Hot Dogs: Preheat grill or grill pan over medium-high heat. Grill hot dogs, turning occasionally, until heated through and grill marks appear, about 8-10 minutes. If using a skillet, add a little oil to prevent sticking.
  4. Toast the Buns: Place buns cut-side down on grill or pan for 1-2 minutes until lightly toasted and warm.
