Flavorful Chipotle Beef and Bean Party Dip

A smoky, spicy, and creamy dip featuring chipotle peppers, ground beef, and black beans, perfect for game day snacks and gatherings.

  • 1 lb ground beef (85% lean preferred)
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 chipotle peppers in adobo plus 1 tbsp adobo sauce
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • 1 cup shredded sharp cheddar cheese (about 100 g)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it apart until no longer pink. Drain excess fat if needed.
  2. Add finely chopped onion and minced garlic to the beef. Cook for 3-4 minutes until onions soften and become translucent, stirring frequently.
  3. Stir in ground cumin, chili powder, salt, and pepper. Mix well to coat evenly.
  4. Finely chop chipotle peppers and add them along with adobo sauce to the skillet. Add black beans and cook for 3-4 minutes to meld flavors.
  5. In a mixing bowl, whisk together softened cream cheese and sour cream until smooth.
  6. Pour the creamy mixture into the skillet with beef and beans. Stir gently over low heat for 2-3 minutes until combined and warmed through.
  7. Stir in shredded cheddar cheese until melted and gooey. Optionally reserve some cheese for topping.
  8. Let the dip simmer on low for another 2 minutes, stirring occasionally. Avoid boiling.
  9. Transfer to a serving dish and garnish with optional toppings like chopped green onions or cilantro. Serve warm with tortilla chips, sliced veggies, or pita bread.

Notes

If dip is too thick, add a splash of milk or broth to loosen. Soften cream cheese ahead or microwave briefly to avoid lumps. Adjust chipotle peppers to control heat. Leftovers keep well refrigerated for up to 3 days and taste better after resting overnight.
