  • 4 salmon fillets (6 ounces each), skin-on or skinless
  • 2 tablespoons packed brown sugar
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • Salt, to taste (kosher salt recommended)
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)
  • Foil sheets, large enough to wrap each fillet

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together melted butter, brown sugar, minced garlic, and lemon juice until smooth.
  3. Pat dry the salmon fillets with paper towels and season both sides lightly with salt and pepper.
  4. Tear off four large sheets of heavy-duty foil (about 12 x 12 inches each). Place one salmon fillet in the center of each sheet.
  5. Brush the brown sugar garlic butter mixture evenly over each fillet.
  6. Fold the foil up around the salmon, crimping the edges tightly to seal the packets.
  7. Place the foil packets on a baking sheet and bake for 15 to 18 minutes, depending on thickness (about 16 minutes for 6-ounce fillets).
  8. Carefully open one packet to check doneness; salmon should flake easily and be opaque. If not done, reseal and bake 2-3 minutes more.
  9. Sprinkle chopped parsley over the salmon before serving and add a squeeze of lemon juice if desired.

Notes

To speed preparation, assemble foil packets ahead and refrigerate; add a few extra minutes to baking time if salmon is cold. For dairy-free, substitute butter with coconut or plant-based oil. Avoid overbaking to keep salmon moist. Opening foil for last 2-3 minutes can add a crispy finish. Add veggies like asparagus inside foil for a complete meal.
