  • White Layer: 1 cup coconut milk (full fat for creaminess)
  • 1 packet (7g) unflavored gelatin or 1 tbsp gelatin powder
  • 1/2 cup sweetened condensed milk (optional, for a richer layer)
  • 1/4 cup vodka or clear spirit
  • Blue Layer: 1 cup blueberry juice (or blueberry-flavored drink)
  • 1 packet (7g) unflavored gelatin or 1 tbsp gelatin powder
  • 1/2 cup vodka
  • 2 tbsp sugar (optional)

Instructions

  1. Prepare the Red Layer: In a small saucepan, pour 1 cup cherry juice and sprinkle 1 packet (7g) gelatin over it. Let it bloom for 5 minutes. Gently heat over low-medium heat, stirring constantly until gelatin and sugar dissolve (3-4 minutes). Remove from heat and stir in 1/2 cup white rum. Let cool slightly (about 10 minutes), then pour into shot cups filling about one-third full. Refrigerate for 30-40 minutes until firm but not fully set.
  2. Prepare the White Layer: While the red layer chills, sprinkle gelatin over 1 cup coconut milk in another bowl; bloom for 5 minutes. Warm gently until smooth. Stir in 1/2 cup vodka and 1/2 cup sweetened condensed milk (if using). Let cool slightly, then spoon gently over the red layer. Refrigerate for another 30-40 minutes to firm up without mixing layers.
  3. Prepare the Blue Layer: Repeat gelatin blooming with 1 cup blueberry juice and gelatin packet. Heat gently with sugar until dissolved. Remove from heat, stir in 1/2 cup vodka, and let cool slightly. Pour over the white layer filling cups to the top. Refrigerate at least 2 hours or until fully set.
  4. Serving: Once fully set, gently peel cups away if silicone or twist plastic cups slightly to loosen. Serve chilled.

Notes

Let each layer firm up enough to hold the next but not fully hard to ensure layers stick together. Cool layers to lukewarm before pouring next to prevent melting and color bleeding. Use mid-proof liquors (40% ABV) for best gelatin setting. Quick chilling in freezer (5-10 minutes) can speed up setting but avoid freezing solid. Use a kitchen thermometer to keep gelatin mixtures around 100°F (38°C) before pouring.
