Festive Crispy Star-Shaped Rice Krispie Pops with Easy Patriotic Chocolate Dip

These star-shaped Rice Krispie pops are a fun and festive treat perfect for holidays and parties, featuring a crunchy texture paired with a creamy, colorful patriotic chocolate dip.

  • 6 cups crispy rice cereal (Kellogg’s recommended)
  • 4 cups mini marshmallows (or regular marshmallows chopped)
  • 3 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract (optional)
  • Wooden lollipop sticks or sturdy skewers
  • 1 cup white chocolate chips
  • Red and blue gel food coloring
  • Red, white, and blue sprinkles or edible glitter

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat and have your star-shaped cookie cutter and lollipop sticks ready.
  2. In a large saucepan over medium-low heat, melt 3 tablespoons of unsalted butter.
  3. Add 4 cups of mini marshmallows and stir continuously until smooth and fully melted, about 5 minutes. Alternatively, melt in the microwave in 30-second intervals, stirring in between.
  4. Remove from heat and stir in 1 teaspoon of vanilla extract.
  5. Immediately add 6 cups of crispy rice cereal to the marshmallow mixture and stir quickly and thoroughly to coat every piece.
  6. Let the mixture cool for about 2 minutes. Lightly butter your hands or spray with non-stick spray and press the mixture onto the lined baking sheet about 1-inch thick.
  7. Use the star-shaped cookie cutter to press out shapes firmly. Carefully poke a wooden lollipop stick halfway into each star, pressing gently to secure. Reshape edges if needed.
  8. Transfer the stars on sticks to a cooling rack or clean surface and allow them to firm up completely, about 15 minutes.
  9. Melt 1 cup of white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between until smooth. Divide the melted chocolate into three bowls.
  10. Add red gel food coloring to one bowl, blue to another, and leave the last white. Stir each to mix vibrant colors.
  11. Holding the stick, dip each star halfway or just the tip into one of the colored chocolates. Place back onto parchment paper and decorate immediately with red, white, and blue sprinkles or edible glitter.
  12. Allow the dipped pops to sit at room temperature until the chocolate hardens, about 20 minutes. For faster results, refrigerate for 10 minutes.

Use dairy-free margarine and vegan marshmallows to make vegan-friendly. Ensure rice cereal is certified gluten-free for gluten-free version. Gel food coloring works best for vibrant chocolate colors without thinning. Lightly grease hands to prevent sticking. Avoid overheating marshmallows and chocolate to prevent burning.
