  • ¾ cup all-purpose flour (95g)
  • ¼ cup unsweetened cocoa powder (25g)
  • ½ teaspoon baking soda

  • ¼ teaspoon salt
  • ½ cup granulated sugar (100g)
  • ⅓ cup brown sugar, packed (65g)
  • 2 large eggs, room temperature
  • ½ cup vegetable oil or melted coconut oil (120ml)
  • 1 teaspoon pure vanilla extract
  • ¾ cup chocolate chips (semi-sweet and dark mix, about 135g) – reserve a few for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
  2. Shred the zucchini using a box grater or food processor. Place shredded zucchini in a clean kitchen towel and squeeze out as much moisture as you can.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  4. In a large bowl, beat the granulated sugar, brown sugar, eggs, and oil until smooth and creamy. Add vanilla extract and mix well.
  5. Add the shredded zucchini to the wet mixture, stirring gently to combine without overworking the batter.
  6. Gradually fold the dry ingredients into the wet zucchini mixture just until combined. Avoid overmixing.
  7. Fold in chocolate chips, reserving a handful for topping.
  8. Scoop batter into muffin cups about ¾ full. Sprinkle remaining chocolate chips on top.
  9. Bake for 20 to 25 minutes. Check doneness with a toothpick; it should come out with moist crumbs.
  10. Let muffins cool in the pan for 5 minutes before transferring to a wire rack.
