These easy turkey apple cheddar pinwheel wraps are a quick, wholesome, and kid-friendly lunch option combining sweet apple, sharp cheddar, and savory turkey in a neat tortilla spiral.

Ingredients

  • Large flour tortillas (about 8-inch size)
  • Thinly sliced turkey breast (low-sodium deli turkey or leftover roasted turkey)
  • Sharp cheddar cheese (shredded or thinly sliced)
  • Apple (Granny Smith or Honeycrisp, thinly sliced)
  • Mayonnaise or cream cheese (plain or flavored)
  • Honey or Dijon mustard (optional)
  • Fresh spinach or lettuce leaves (optional)

Instructions

  1. Wash and dry the apple. Using a sharp knife or mandoline, slice the apple into very thin rounds (about 1/8 inch or 3 mm thick). Set aside.
  2. Shred or thinly slice the cheddar cheese if not pre-shredded. Lay out your tortillas on a clean surface.
  3. Using a spatula, spread a thin, even layer of mayonnaise or cream cheese over each tortilla. If desired, mix a teaspoon of honey or Dijon mustard into the spread before applying.
  4. Arrange turkey slices evenly over the spread, leaving about 1/2 inch (1.3 cm) border around the edges to prevent overflow.
  5. Scatter the thin apple slices on top of the turkey, overlapping slightly.
  6. Add a layer of shredded cheddar cheese, and if using, place a few fresh spinach or lettuce leaves on top.
  7. Starting from one edge, gently but firmly roll the tortilla into a tight spiral. Wrap each roll tightly in plastic wrap or parchment paper.
  8. Chill in the fridge for at least 15 minutes to help the pinwheels hold their shape when sliced.
  9. Remove the rolls from the fridge and unwrap. Using a sharp serrated knife, slice each roll into 1-inch (2.5 cm) thick pinwheels.
  10. Arrange on a plate or pack directly into lunch containers.

Notes

Use room temperature tortillas to reduce cracking. Thinly slice apples to prevent sogginess. Chill wraps before slicing to help them hold shape. Customize with different spreads or fillings as desired. Prepare the night before but slice just before packing to keep apples crisp.
