A quick and simple recipe for tangy and sweet bread and butter pickles that are ready in under 15 minutes of prep and soak overnight for perfect homemade flavor.

  • 4 medium Kirby or pickling cucumbers, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 1 cup (240 ml) apple cider vinegar
  • 1 cup (240 ml) water
  • 3/4 cup (150 g) granulated sugar
  • 1 tablespoon salt (pickling or kosher salt recommended)
  • 1 tablespoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground black pepper
  • 34 whole cloves (optional)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Wash and thinly slice 4 medium Kirby cucumbers and 1 small yellow onion to about 1/8-inch (3 mm) thickness. Toss them in a large bowl.
  2. In a medium saucepan, combine 1 cup apple cider vinegar, 1 cup water, 3/4 cup granulated sugar, and 1 tablespoon salt. Add 1 tablespoon mustard seeds, 1/2 teaspoon turmeric, 1/2 teaspoon black pepper, and 3–4 whole cloves. Warm over medium heat, stirring occasionally until sugar and salt dissolve completely (about 5 minutes). Avoid boiling.
  3. Pour the hot brine over the cucumber and onion slices. Stir gently to coat evenly.
  4. Transfer the mixture to a clean quart-sized glass jar or airtight container. Press down gently to submerge the veggies in the brine. Use a spoon or small plate if needed to keep everything covered.
  5. Let the jar cool to room temperature, then seal and refrigerate. Let pickles soak for at least 6 hours, preferably 24 hours for best flavor.
  6. Enjoy cold or at room temperature. Store in the fridge for up to 2 weeks.

Notes

Slice cucumbers uniformly thin for best crunch. Warm brine just enough to dissolve sugar and salt without boiling. Let pickles chill at least 6 hours, preferably overnight. Avoid overcrowding the jar to prevent mushy spots. Adjust sweetness or tang by adding more sugar or vinegar after tasting. Use glass jars for best flavor and storage.
