Instructions

  1. Rinse and dice the tomatoes into small, bite-sized pieces. Place them in a mixing bowl.
  2. Add the minced garlic and thinly sliced basil to the tomatoes.
  3. Pour in the balsamic vinegar and 3 tablespoons of extra virgin olive oil.
  4. Season with salt and freshly cracked black pepper to taste. Toss gently to combine and let sit while preparing the bread.
  5. Preheat oven to 400°F (200°C). Slice the baguette or ciabatta into 1/2-inch thick slices.
  6. Rub one side of each bread slice gently with the whole garlic clove to add subtle garlic flavor.
  7. Brush each slice lightly with olive oil and arrange on a baking sheet in a single layer.
  8. Toast the bread in the oven for 8-10 minutes or until edges are golden and crispy. Optionally broil for 1-2 minutes for extra crunch, watching carefully to avoid burning.
  9. Once toasted and slightly cooled, spoon the tomato mixture generously over each slice.
