  • 1 packet powdered fruit pectin (about 1.75 ounces or 50 grams)

Instructions

  1. Rinse the strawberries and rhubarb under cold water. Hull the strawberries and chop into roughly ½-inch pieces. Trim and chop rhubarb stalks into similar-sized pieces.
  2. In a medium saucepan, combine strawberries, rhubarb, and granulated sugar. Stir gently to coat the fruit with sugar. Let sit for 15 minutes to macerate.
  3. Stir in freshly squeezed lemon juice and sprinkle powdered pectin over the fruit mixture. Whisk briskly to combine and prevent lumps.
  4. Place saucepan over medium-high heat and bring mixture to a full rolling boil that cannot be stirred down. Stir frequently to prevent burning. Boil hard for 1 minute, then remove from heat.
  5. Test the jam set by placing a small spoonful on a chilled plate. Let cool for a minute and run your finger through it. If it wrinkles and holds shape, it is done; if not, boil for another minute and test again.
  6. Spoon hot jam into a clean jar or container. Let cool to room temperature uncovered, then seal and refrigerate. Jam will thicken as it cools.
