A quick and easy summer dessert featuring juicy peaches baked under a crisp cake mix topping in a cast iron skillet, finished with a rich salted caramel drizzle.

  • 4 cups sliced fresh peaches (about 45 medium peaches) or 2 cans (15 oz each) sliced peaches in juice, drained slightly
  • ½ cup granulated sugar (100g)
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 box yellow cake mix (about 15.25 oz)
  • 1 cup unsalted butter (227g or 2 sticks), cold and cut into small cubes
  • ½ cup salted caramel sauce (store-bought or homemade)
  • Pinch of sea salt flakes (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Place your 10-inch cast iron skillet on the counter to prep the ingredients.
  2. In a medium bowl, combine sliced peaches, granulated sugar, cornstarch, and ground cinnamon. Toss gently until peaches are evenly coated.
  3. Spread the peach mixture evenly in the bottom of the skillet in a single layer or slightly mounded.
  4. Sprinkle the dry cake mix evenly over the peaches without stirring.
  5. Dot the cold butter cubes evenly over the cake mix to cover the surface.
  6. Place the skillet in the oven and bake for 40-45 minutes until edges bubble and caramelize and the top is golden brown. Tent with foil after 30 minutes if browning too fast.
  7. Remove from oven and let cool for 10 minutes to thicken the filling.
  8. Warm the salted caramel sauce slightly if needed and drizzle generously over the warm cake. Sprinkle a pinch of flaky sea salt on top.
  9. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Use cold butter in cubes for a crisp topping. Do not stir cake mix into peaches to maintain texture contrast. Cornstarch is essential to thicken the filling and prevent sogginess. Tent with foil if browning too quickly. Warm caramel before drizzling for best texture.
