Instructions

  1. Preheat your oven to 425°F (220°C) and allow it to fully heat for about 10 minutes.
  2. Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides.
  3. Slice each peach in half, remove the pit, then cut each half into 4 wedges for uniform roasting.
  4. In a mixing bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, fresh thyme leaves, and red pepper flakes if using.
  5. Toss the chicken thighs and peach slices in the glaze until evenly coated. Let rest for 10 minutes if time allows.
  6. Arrange the chicken thighs skin-side up in a single layer on a rimmed sheet pan. Nestle the peach slices around the chicken, skin side down.
  7. Roast in the oven for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crisp. Halfway through, baste the chicken with pan juices and gently turn the peaches for even roasting.
