These easy pencil-shaped Rice Krispie treat pops are a fun and nostalgic back-to-school snack made with simple pantry staples. They combine the classic crispy, chewy texture of Rice Krispies with a playful pencil shape that kids love.

  • 6 cups (180 g) Rice Krispies cereal
  • 10 oz (280 g) marshmallows (mini or regular)
  • 3 tbsp (42 g) unsalted butter
  • 1 tsp (5 ml) vanilla extract
  • Yellow, pink, and black gel food coloring
  • Chocolate chips (optional, for pencil tip)
  • 1215 wooden lollipop sticks

Instructions

  1. Line a baking sheet with wax paper or a silicone mat and set out your lollipop sticks.
  2. In a large saucepan over low heat, melt 3 tablespoons (42 g) of unsalted butter, about 2-3 minutes, watching carefully to avoid browning.
  3. Add 10 ounces (280 g) of marshmallows to the melted butter and stir continuously with a wooden spoon until completely melted and smooth, about 4-5 minutes. Stir in 1 teaspoon (5 ml) vanilla extract.
  4. Remove the pan from heat and gently fold in 6 cups (180 g) of Rice Krispies cereal until evenly coated, being careful not to overmix.
  5. Divide the mixture quickly into three bowls while still warm (about 1/3 each). Add yellow gel food coloring to the largest portion and mix thoroughly for the pencil body. Use pink gel in a smaller portion for the eraser, and leave the rest plain or add a tiny bit of black for the pencil tip base.
  6. Lightly grease your hands with butter or water to prevent sticking. Take a handful of the yellow mixture and form it into a pencil shape about 4-5 inches (10-13 cm) long and 1 inch (2.5 cm) thick. Insert a lollipop stick halfway through the length for stability.
  7. Use the pink mixture to create a small cylinder at one end for the eraser. For the tip, shape a small piece of the black-tinted mixture or dip the end in melted chocolate chips, letting it harden slightly for the lead effect.
  8. Place the finished pencil pops on the lined baking sheet and allow them to cool and firm up for at least 30 minutes at room temperature or refrigerate for quicker setting.
  9. Optionally, pipe on small details like wood grain or lines with melted chocolate or colored icing.

Notes

Use gel food coloring to avoid thinning the marshmallow mixture. Grease hands with butter or water to prevent sticking while shaping. Work quickly before the mixture cools and hardens. Store in an airtight container at room temperature for up to 3 days or freeze wrapped individually for longer storage.
