  • 1 package (1.75 ounces or 50 grams) no-cook fruit pectin (Sure-Jell or Ball recommended)
  • 2 tablespoons fresh lemon juice
  • 1/2 cup (120 ml) water
  • Optional: pinch of ground cinnamon or nutmeg

Instructions

  1. Prepare the peaches: Wash, peel (blanch in boiling water for 30 seconds then ice bath), pit, and chop into 1/2 inch chunks. Place in a large mixing bowl and crush some peaches with a potato masher or fork to create a mix of chunks and softer bits. (Approx. 10 minutes)
  2. Mix pectin and sugar: In a separate bowl, whisk no-cook fruit pectin with 1/2 cup cold water until dissolved. Add sugar and whisk until smooth with no lumps. (Approx. 5 minutes)
  3. Add lemon juice and bourbon: Stir fresh lemon juice and bourbon into the mashed peaches. Add optional cinnamon or nutmeg if desired. (Approx. 2 minutes)
  4. Combine everything: Pour sugar-pectin mixture over peaches and gently fold with a spatula or large spoon until well combined but not overly stirred. Jam will thicken within minutes. (Approx. 3 minutes)
  5. Fill containers and freeze: Spoon jam into clean, freezer-safe jars or containers leaving 1/2 inch headspace. Seal tightly, label, and freeze. Jam is ready after 24 hours but best after 3 days. (Approx. 5 minutes)
