  • 8 ounces (225 g) cream cheese, softened (full fat recommended)
  • 1 cup (120 g) powdered sugar, sifted

  • ½ cup (120 ml) heavy cream or whipped topping, whipped to soft peaks (dairy-free coconut cream optional)
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries, washed
  • 1 medium banana, sliced thinly
  • Optional fresh mint leaves for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-inch pizza pan or rimmed baking sheet with parchment paper.
  2. Press sugar cookie dough into the pan, forming an even 12-inch circle about ¼ inch thick with slightly raised edges. This takes about 5 minutes.
  3. Bake crust for 12-15 minutes until edges are golden brown and center is set but soft. Remove and cool completely on a wire rack.
  4. In a mixing bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy (3-4 minutes). In a separate bowl, whip heavy cream until soft peaks form, then fold into cream cheese mixture.
  5. Spread cream cheese mixture evenly over cooled cookie crust with a spatula, about ¼ inch thick, taking care not to crack the crust (about 5 minutes).
  6. Arrange fruit on top in a patriotic pattern: ring of blueberries on outer edge, circle of sliced strawberries inside, and banana slices in the center. This takes about 10 minutes.
  7. Garnish with fresh mint leaves if desired.
  8. Chill the fruit pizza in the refrigerator for at least 30 minutes before serving.

Cool the cookie crust completely before spreading the cream cheese topping to prevent melting. Chill the assembled pizza for at least 30 minutes to set the topping and meld flavors.
