  • 1 ½ cups (135 g) old-fashioned rolled oats
  • ¼ cup (85 g) honey
  • 3 tablespoons (21 g) ground flaxseed
  • 2 tablespoons (20 g) chia seeds
  • 1 teaspoon (5 ml) vanilla extract
  • ½ teaspoon (1 g) cinnamon (optional)
  • ⅓ cup (60 g) mini chocolate chips (optional)
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine 1 cup (240 ml) sunflower butter, ¼ cup (85 g) honey, and 1 teaspoon (5 ml) vanilla extract. Stir until smooth and well-blended, about 1-2 minutes.
  2. Add 1 ½ cups (135 g) rolled oats, 3 tablespoons (21 g) ground flaxseed, 2 tablespoons (20 g) chia seeds, ½ teaspoon (1 g) cinnamon, and a pinch of salt to the wet mixture. If using, add ⅓ cup (60 g) mini chocolate chips. Stir until evenly combined.
  3. Cover the bowl and refrigerate for 10-15 minutes to firm up the mixture.
  4. Scoop about 1 tablespoon (15 ml) of the mixture and roll into tight balls. Repeat until all mixture is used, yielding about 18-20 energy balls.
  5. Place the balls on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to set.
  6. Store in an airtight container in the refrigerator for up to one week or freeze for longer storage.

Notes

Chill the mixture before rolling to make handling easier. Adjust texture by adding more oats if too sticky or a teaspoon of sunflower butter or water if too dry. Use rolled oats for best texture. Optional ingredients like mini chocolate chips add indulgence. For vegan version, substitute honey with maple syrup or agave nectar.
