Easy No-Bake Patriotic Berry Lasagna

A quick and easy no-bake dessert featuring creamy vanilla layers and fresh summer berries, perfect for summer parties and gatherings.

  • 2 cups (200g) graham cracker crumbs
  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces (450g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) heavy cream
  • 1 ½ cups (225g) fresh strawberries, hulled and sliced
  • 1 ½ cups (225g) fresh blueberries
  • 1 cup (150g) fresh raspberries (optional)
  • Powdered sugar for dusting (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the crust: In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until the mixture resembles wet sand. Press evenly into the bottom of a 9×13 inch baking dish. Compact firmly using the back of a spoon or flat-bottomed glass. Chill in the fridge for about 10 minutes.
  2. Make the creamy vanilla layer: Beat softened cream cheese until smooth and fluffy. Gradually add powdered sugar and vanilla extract, mixing well after each addition. In a separate bowl, whip heavy cream to soft peaks. Gently fold whipped cream into the cream cheese mixture without deflating it.
  3. Assemble the first creamy layer: Spread half of the vanilla cream mixture evenly over the chilled crust. Smooth with a spatula.
  4. Add the berry layer: Scatter sliced strawberries and blueberries evenly over the creamy layer. Add raspberries if using. Press berries gently into the cream without mixing.
  5. Repeat layers: Spread the remaining vanilla cream mixture over the berries, smoothing the top. Finish by layering the remaining berries on top.
  6. Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  7. Serving: Before serving, dust with powdered sugar and garnish with fresh mint leaves if desired. Slice with a sharp knife for clean layers.

Notes

Use softened cream cheese at room temperature for smooth filling. Whip heavy cream in a chilled bowl for best results. Press crust firmly to avoid crumbling. Chill at least 4 hours or overnight for best layering and flavor melding. Pat berries dry before layering to prevent sogginess. For gluten-free, substitute crust with gluten-free cookies. For dairy-free, use almond or coconut yogurt and coconut cream.
