  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika

  • 8 large eggs, beaten
  • 1/4 cup milk or cream
  • 2 tablespoons fresh chives, chopped
  • 8 large flour tortillas (10-inch size)
  • 2 cups shredded cheddar cheese
  • 1 cup salsa or pico de gallo
  • Optional: sliced avocado, sour cream, or hot sauce for topping

Instructions

  1. Heat skillet over medium heat. Add sausage, breaking it up with a spatula. Add chopped onion and minced garlic. Cook until sausage is browned and cooked through, about 8-10 minutes. Drain excess grease if necessary.
  2. Whisk together eggs, milk, chives, salt, and pepper in a bowl until combined and frothy. Set aside.
  3. Lower heat to medium-low. Pour egg mixture into the pan. Let sit for 20 seconds, then gently scramble until soft curds form but eggs are still moist, about 3-4 minutes. Remove from heat.
  4. Warm tortillas in a dry skillet or microwave for 15 seconds to make them flexible.
  5. Lay a tortilla flat. Spoon about 1/4 cup of sausage mixture in the center, followed by an equal amount of scrambled eggs. Sprinkle with 1/4 cup shredded cheddar cheese. Add a spoonful of salsa if desired.
  6. Fold sides of tortilla over filling, then roll tightly from one end to the other.
  7. Wrap each burrito tightly in foil or parchment paper. Freeze on a baking sheet for at least 1 hour before transferring to a freezer-safe container.
  8. To serve, microwave wrapped burritos for 2-3 minutes or bake in a 350°F oven for 20 minutes until heated through.
