  • 4 skin-on salmon fillets (6 ounces each)
  • 12 ounces fresh green beans, trimmed
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a medium bowl, whisk together honey, minced garlic, soy sauce, olive oil, lemon juice, and red pepper flakes if using until glossy and well combined.
  3. Rinse and trim the ends off the green beans. Add them to the bowl with the sauce and toss until evenly coated.
  4. Line a half-sheet pan (18×13 inches) with parchment paper or a silicone baking mat. Spread the green beans in an even layer on one side of the pan.
  5. Pat the salmon fillets dry with paper towels and place them skin-side down on the other side of the pan.
  6. Brush some of the honey garlic sauce over the top of each salmon fillet, reserving the rest for the green beans. Season both salmon and green beans lightly with salt and black pepper.
  7. Roast in the preheated oven for 12-15 minutes, until the salmon flakes easily with a fork and the green beans are tender with caramelized edges. Remove green beans early if they finish before the salmon.
  8. Optional: Broil for 1-2 minutes at the end for extra caramelization, watching closely to prevent burning.
  9. Let the salmon rest for 2-3 minutes before serving. Spoon any pan juices over the top and garnish with fresh lemon zest or chopped parsley if desired.
