Instructions

  1. Preheat your oven to 350°F (175°C). Grease your mini muffin pan or line with mini cupcake liners.
  2. Melt 1/2 cup (115g) unsalted butter until just melted and let cool slightly.
  3. Add 1 cup (200g) granulated sugar to the melted butter and whisk until combined.
  4. Beat in 2 large eggs, one at a time, then add 1 teaspoon vanilla extract. Mix until smooth and glossy.
  5. In a separate bowl, sift together 3/4 cup (95g) all-purpose flour, 1/3 cup (35g) unsweetened cocoa powder, 1/4 teaspoon salt, and 1 teaspoon instant coffee granules (optional). Stir gently to combine.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix.
  7. Spoon batter evenly into the prepared mini muffin cups, filling about 3/4 full (makes roughly 24 brownie bites).
  8. Bake for 12-15 minutes, checking at 12 minutes with a toothpick; it should come out with a few moist crumbs but no raw batter.
  9. Cool completely on a wire rack before decorating.
  10. Spread a small dollop of chocolate frosting on each brownie bite, then press a mini cookie or graham cracker square on top to form the graduation cap.
