Easy Fresh Mini Caprese Skewers Recipe Perfect for Summer Parties

A quick and fresh appetizer featuring bite-sized mozzarella, cherry tomatoes, and basil on mini skewers, drizzled with a homemade balsamic glaze. Perfect for summer parties and last-minute gatherings.

  • 1 cup (240 ml) balsamic vinegar
  • 1 tablespoon (15 g) honey or brown sugar (optional)
  • Creamy fresh mozzarella balls (Bocconcini or Ciliegine), about 20 small balls
  • 20 cherry or grape tomatoes
  • 20 fresh basil leaves
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Extra virgin olive oil, for drizzling (optional)

Instructions

  1. Prepare the balsamic glaze: Pour 1 cup balsamic vinegar into a small saucepan. Add 1 tablespoon honey or brown sugar if desired. Bring to a gentle simmer over medium heat, stirring occasionally. Reduce for 10-15 minutes until thick enough to coat the back of a spoon. Remove from heat and let cool to room temperature.
  2. Wash and dry the cherry tomatoes and fresh basil leaves thoroughly.
  3. Drain and pat dry the mozzarella balls to avoid sogginess.
  4. Assemble the skewers by threading one cherry tomato, a folded basil leaf, and one mozzarella ball onto each mini skewer or toothpick.
  5. Arrange the skewers on a serving platter. Lightly season with salt and freshly ground black pepper.
  6. Drizzle the balsamic glaze evenly over the skewers. Optionally, drizzle a little extra virgin olive oil on top.
  7. Serve immediately or chill for up to 2 hours before serving.

Notes

Do not rush the balsamic reduction to avoid burning. Dry all ingredients thoroughly to help the glaze stick. For a twist, lightly grill skewers for 1-2 minutes to warm cheese and add smoky flavor. Balsamic glaze can be made up to a week ahead and stored refrigerated. Use fresh, high-quality mozzarella balls for best texture and flavor.
