Easy Caprese Skewer Lunchbox Recipe with Sweet Balsamic Glaze

A quick and fresh Caprese skewer recipe featuring cherry tomatoes, fresh mozzarella, and basil leaves, enhanced with a sweet balsamic glaze perfect for lunchboxes and picnics.

  • 2025 cherry tomatoes, washed and dried
  • 2025 fresh mozzarella balls (bocconcini or ciliegine), drained
  • 2025 fresh basil leaves, washed and patted dry
  • 1 cup (240 ml) balsamic vinegar
  • 2 tablespoons (25 g) brown sugar or honey
  • 1 teaspoon (5 ml) olive oil (optional)
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Make the Sweet Balsamic Glaze: Pour 1 cup balsamic vinegar into a small saucepan. Add 2 tablespoons brown sugar or honey. Heat over medium heat, stirring occasionally, until sugar dissolves and mixture simmers, about 5 minutes.
  2. Reduce heat to low and simmer gently until thickened to syrupy consistency, about 10-12 minutes. Remove from heat and stir in 1 teaspoon olive oil if using. Set aside to cool slightly.
  3. Prep the Ingredients: Wash and dry cherry tomatoes and basil leaves carefully. Drain mozzarella balls well.
  4. Assemble the Skewers: Thread one cherry tomato, a folded basil leaf, then a mozzarella ball onto each skewer. Repeat until all ingredients are used.
  5. Season the Skewers: Lightly sprinkle with salt and freshly ground black pepper.
  6. Drizzle or Brush with Olive Oil: Lightly brush or drizzle extra virgin olive oil over the skewers.
  7. Apply the Sweet Balsamic Glaze: Drizzle the cooled but pourable balsamic glaze generously over the skewers using a spoon or small brush.
  8. Pack or Serve: Place skewers in a lunchbox lined with parchment or arrange on a platter with extra glaze on the side.

Notes

If glaze thickens too much when cooled, gently rewarm over low heat before drizzling. Assemble skewers just before eating to keep basil fresh and prevent cheese drying. Wooden skewers can be soaked in water for 10 minutes if grilling. Toothpicks can substitute but are less stable for packing.
