  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract

  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (60g) unsalted butter, softened
  • 1 1/2 cups (180g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk or heavy cream (to loosen frosting if needed)
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • Optional: fresh mint leaves for garnish

Instructions

  1. Prepare the Brownie Base (about 15 minutes): In a microwave-safe bowl, combine the chocolate chips and butter. Heat in 30-second bursts, stirring in between, until melted and smooth. Set aside to cool slightly.
  2. In a large bowl, whisk together the sugar and eggs until pale and slightly thickened (about 2 minutes by hand or 1 minute with a mixer).
  3. Stir in the vanilla extract, then gradually add the melted chocolate mixture, folding gently until combined.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt. Slowly fold these dry ingredients into the wet mixture until just combined—do not overmix.
  5. Pour the batter into the prepared 9×13-inch pan, spreading evenly with a spatula. Set in the fridge to chill and firm up for at least 1 hour.
  6. Make the Cream Cheese Frosting (10 minutes): Beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar and beat until fluffy. Add vanilla extract and a tablespoon of milk if frosting feels too thick. Taste and adjust sweetness if needed.
  7. Once the brownie slab is firm, spread the cream cheese frosting evenly over the top with an offset spatula or butter knife.
  8. Decorate the Flag (10 minutes): Arrange the blueberries in the upper left corner to create the ‘stars’ section of the flag. Then create horizontal stripes with the sliced strawberries across the rest of the slab, leaving space between stripes for a clean look.
  9. Return the slab to the fridge to set for another 30 minutes to help the frosting firm up and keep the berries fresh.
  10. Slice into squares and serve chilled or at room temperature.

Notes

Let cream cheese sit at room temperature for 20 minutes before making frosting to avoid lumps. Melt chocolate slowly to prevent graininess. Fold brownie batter gently to keep fudgy texture. Chill brownie base at least 1 hour and frosting set for 30 minutes for best results. Use fresh berries for best flag design; if using frozen, thaw and dry thoroughly.
