  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 cup (125g) all-purpose flour, sifted
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 cup (90g) shredded unsweetened coconut, toasted
  • 3/4 cup (90g) roasted almonds, chopped
  • 1/2 cup (90g) semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
  2. Toast 1 cup shredded coconut in a dry skillet over medium heat, stirring constantly for 3-5 minutes until golden brown and fragrant. Transfer to a plate and let cool.
  3. In a large bowl, whisk together melted butter, sugar, eggs, and vanilla extract until smooth and glossy (about 2-3 minutes).
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Gradually fold the dry ingredients into the wet ingredients gently with a spatula until just combined. Avoid overmixing.
  6. If using, fold in the chocolate chips.
  7. Fold in the chopped roasted almonds evenly throughout the batter.
  8. Pour the batter into the prepared pan and smooth the surface with a spatula.
  9. Generously sprinkle the toasted coconut evenly over the top of the batter.
  10. Bake for 30-35 minutes, checking at 30 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter.
  11. Cool the brownies completely in the pan on a wire rack for at least 45 minutes before slicing.

Do not overmix the batter to keep brownies fudgy. Toast coconut carefully to avoid burning. Use room temperature eggs for better mixing. Use quality cocoa powder for richer flavor.
