  • 1/2 teaspoon garlic powder
  • 1 medium lemon, zested and juiced
  • 1/4 cup Parmesan cheese (about 25 grams), finely grated
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • Optional: 1/8 teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C). Allow the oven to fully heat before placing asparagus inside.
  2. Rinse and pat dry 1 pound (450 grams) of asparagus. Snap or trim off the tough woody ends (about 1 to 2 inches).
  3. Place asparagus in a mixing bowl. Add 2 tablespoons olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Toss well to coat evenly.
  4. Spread the spears out in a single layer on a parchment-lined rimmed baking sheet. Avoid overcrowding to ensure even roasting.
  5. Roast for 12-15 minutes until edges are crisp and tips are slightly browned. Halfway through (around 7 minutes), use tongs to turn the asparagus for even cooking.
  6. While asparagus roasts, zest 1 lemon and finely grate 1/4 cup Parmesan cheese. Set aside.
  7. Once asparagus is out of the oven, immediately drizzle with about 1 tablespoon fresh lemon juice, then sprinkle lemon zest and Parmesan evenly over the hot spears. Toss gently to combine.
  8. Optionally, sprinkle red pepper flakes or extra black pepper for a little heat.
  9. Serve warm immediately for best crispness.
