  • ½ cup finely grated Parmesan cheese (preferably Parmigiano-Reggiano)
  • 1 large egg, at room temperature
  • ¼ cup all-purpose flour (can substitute with almond flour for gluten-free)
  • Salt and freshly ground black pepper, to taste
  • For the garlic herb dip:
  • ½ cup Greek yogurt (full-fat or dairy-free alternative)
  • 1 clove garlic, finely minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon lemon juice
  • Pinch of salt, to taste

Instructions

  1. Grate the zucchini using the large holes of a box grater to yield about 3 cups grated. Transfer to a clean kitchen towel or cheesecloth and squeeze firmly over the sink to remove as much moisture as possible.
  2. In a medium mixing bowl, combine the drained zucchini, ½ cup finely grated Parmesan, 1 large egg, ¼ cup all-purpose flour, and a pinch of salt and pepper. Mix gently until just combined. If the mixture is too wet, add more flour one tablespoon at a time.
  3. Preheat a cast-iron or non-stick skillet over medium heat and add 2 tablespoons olive oil. Heat until the oil shimmers but does not smoke, about 3-4 minutes.
  4. Scoop about 2 tablespoons of the zucchini mixture and shape gently into a round, flat patty. Place in the skillet without overcrowding (3-4 fritters at a time).
  5. Fry the fritters for 3-4 minutes on the first side until edges are crispy and golden brown. Flip carefully and cook for another 3 minutes on the other side until deep golden and firm.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  7. While fritters cook, prepare the garlic herb dip by mixing ½ cup Greek yogurt, minced garlic, chopped parsley, chopped chives, lemon juice, and a pinch of salt in a small bowl. Stir well and refrigerate until serving.
  8. Serve the fritters warm with the garlic herb dip on the side.

Notes

Squeeze out zucchini moisture thoroughly to avoid soggy fritters. Use freshly grated Parmesan for best melting and browning. Do not overcrowd the pan to maintain oil temperature. Let batter rest for 10 minutes for better texture. For a lighter version, bake at 425°F for 15 minutes, flipping halfway.
