  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse the garlic scapes under cold water and pat dry with a kitchen towel. Trim off the tough ends (about 1-2 inches from the base), then cut into 3-inch pieces.
  2. Heat a large skillet over medium heat and add the olive oil and butter. Let the butter melt completely and start to bubble gently without browning or burning.
  3. Spread the garlic scapes in a single layer in the skillet. Cook undisturbed for 3-4 minutes until the bottoms are golden and crispy. Cook in batches if necessary to avoid overcrowding.
  4. Use tongs or a spatula to turn the scapes and cook for another 4-5 minutes, stirring occasionally, until tender-crisp and evenly browned.
  5. Turn off the heat and immediately squeeze fresh lemon juice over the scapes. Sprinkle lemon zest, salt, and black pepper, then toss gently to coat.
  6. Sprinkle grated Parmesan over the hot scapes, allowing it to melt slightly. Toss gently and serve immediately.

Notes

Use medium to medium-low heat to avoid burning the butter. Cook garlic scapes in batches to prevent steaming and sogginess. Dry scapes thoroughly before cooking to reduce splattering.
