  • 4 strips cooked bacon, crumbled (optional)
  • 2 stalks green onions, thinly sliced
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • About 2 cups (500ml) vegetable oil or peanut oil for frying
  • Sweet chili sauce for dipping

Instructions

  1. Prepare the filling: In a medium bowl, mix softened cream cheese with shredded sharp cheddar until smooth. Stir in finely diced jalapeños, sliced green onions, garlic powder, crumbled bacon if using, and season with salt and pepper. Adjust consistency with more cheese if too runny.
  2. Assemble the egg rolls: Lay one egg roll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of filling near the bottom corner. Fold the bottom corner over the filling, then fold in left and right corners snugly. Roll tightly toward the top corner, sealing the edge with a dab of water. Repeat for all wrappers. Keep covered with a damp cloth.
  3. Heat the oil: Pour about 2 cups vegetable or peanut oil into a deep frying pan or Dutch oven. Heat over medium-high until oil reaches 350°F (175°C).
  4. Fry the egg rolls: Fry 3-4 egg rolls at a time, turning occasionally, until golden brown and crispy on all sides, about 3-4 minutes per batch. Avoid overcrowding.
  5. Drain and serve: Remove egg rolls with a slotted spoon and place on paper towels or wire rack to drain excess oil. Let cool slightly.
  6. Serve with sweet chili dip: Spoon sweet chili sauce into a small bowl for dipping.

Notes

Maintain oil temperature between 340-360°F (171-182°C) for best results. Seal wrappers tightly with water to prevent filling leakage. Fry in small batches to keep oil temperature steady. Can bake at 400°F (200°C) for 15-20 minutes for a lighter version. Assemble and freeze uncooked egg rolls for later frying.
