Ingredients

  • Granulated sugar (for coating and strawberry sauce)
  • Ground cinnamon (optional, for coating)
  • Vegetable oil or canola oil (for frying)
  • Fresh strawberries, hulled and sliced
  • Fresh lemon juice
  • Water (to thin strawberry sauce if needed)
  • Vanilla extract (optional, for strawberry sauce)

Instructions

  1. Cut the chilled cheesecake into 1-inch cubes. Place on a parchment-lined tray and freeze for at least 1 hour to firm up.
  2. Make the strawberry sauce by combining sliced strawberries, about 2 tablespoons sugar, and a splash of water in a small saucepan. Cook over medium heat for 5-7 minutes until strawberries soften. Mash gently, stir in lemon juice and vanilla if using, then remove from heat and let cool.
  3. Prepare dredging station with three shallow bowls: one with all-purpose flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, sugar, and cinnamon (about ½ cup panko, 1 tablespoon sugar, ½ teaspoon cinnamon).
  4. Dredge each frozen cheesecake cube first in flour (shake off excess), then egg, then breadcrumb mixture, pressing gently to adhere. For extra crispiness, repeat the egg and breadcrumb step to double coat.
  5. Heat 2-3 inches of oil in a medium saucepan or deep fryer to 350°F (175°C). Use a thermometer to maintain temperature.
  6. Fry cheesecake bites in small batches for 1-2 minutes, turning gently until golden brown on all sides. Remove with a slotted spoon and drain on paper towels or wire rack.
  7. Serve warm with strawberry dipping sauce on the side.

Freeze cheesecake cubes for at least 1 hour before frying to prevent melting. Maintain oil temperature around 350°F (175°C) for best results. Double coat the bites for extra crispiness.
