Ingredients

Scale
  • 24 wonton wrappers
  • Cooking spray or olive oil (for crispiness and golden color)
  • 2 cups cooked, shredded chicken breast (rotisserie chicken works great)
  • 4 oz (113g) cream cheese, softened (full-fat recommended)
  • ½ cup (120 ml) buffalo wing sauce (e.g., Frank’s RedHot)
  • ½ cup (50 g) shredded sharp cheddar cheese
  • ¼ cup (25 g) shredded mozzarella cheese
  • 2 tablespoons (30 ml) ranch or blue cheese dressing (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional garnish: chopped green onions or chives
  • Optional garnish: extra buffalo sauce drizzle

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray or brush the muffin tin cups with oil. Press one wonton wrapper into each muffin cup, gently forming a cup shape. Spray the wrappers lightly on top as well.
  3. Bake the cups for 8-10 minutes until golden and crisp. Watch closely after 7 minutes to avoid over-browning. Remove and let cool slightly.
  4. In a medium bowl, combine softened cream cheese and buffalo sauce. Mix until smooth and creamy using a hand mixer or spoon.
  5. Add shredded chicken, cheddar, mozzarella, garlic powder, and ranch or blue cheese dressing if using. Stir well to combine. Season with salt and pepper to taste.
  6. Fill each wonton cup generously with the buffalo chicken mixture using a small spoon or cookie scoop.
  7. Return the filled cups to the oven for 5-7 minutes to warm the filling and melt the cheese. Tops should be bubbly and slightly browned.
  8. Garnish with chopped green onions or a drizzle of extra buffalo sauce if desired. Serve warm.

Notes

Use gluten-free wonton wrappers or small tortilla rounds for gluten-free version. For dairy-free, substitute cream cheese and shredded cheese with vegan alternatives. If filling is too runny, chill for 10-15 minutes before filling cups. Avoid overcrowding cups in oven when baking filled cups. Tent with foil if edges brown too quickly. Serve warm for best texture. Leftovers keep up to 3 days refrigerated; reheat in toaster oven or air fryer to restore crispiness.
