Instructions

  1. Preheat your oven to 425°F (220°C). Allow the oven to fully reach temperature before baking.
  2. Prepare the breading station: In one shallow bowl, beat the 2 large eggs lightly. In another shallow bowl, combine 1 cup panko breadcrumbs, 1 cup grated Parmesan, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried Italian herbs, salt, and pepper to taste. Mix well.
  3. Pat the pork chops dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper.
  4. Dip each chop into the beaten egg mixture, allowing excess to drip off, then press firmly into the breadcrumb-Parmesan mixture. Ensure the chops are evenly coated all over.
  5. Place the coated chops on a wire rack set over a rimmed baking sheet. Lightly spray or brush the tops with olive oil or melted butter.
