  • 3 medium zucchinis, cut into fries about 1/2-inch thick
  • 1/2 cup all-purpose flour (60g)
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs (150g), preferably Japanese-style
  • 1/3 cup grated Parmesan cheese (about 30g)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • Olive oil spray or light cooking spray
  • For the Spicy Sriracha Aioli Dip:
  • 1/2 cup mayonnaise (120ml), full-fat
  • 1 to 2 tbsp sriracha sauce (adjust to heat preference)
  • 1 small garlic clove, finely minced
  • 1 tsp freshly squeezed lime juice
  • 1/2 tsp honey or maple syrup
  • Pinch of salt

Instructions

  1. Wash and dry zucchinis thoroughly. Cut lengthwise into sticks about 1/2-inch thick, aiming for uniform size (yields about 36-40 fries).
  2. Set up dredging stations: In one bowl, mix all-purpose flour with salt and pepper. In a second bowl, beat eggs until smooth. In a third bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, and pepper.
  3. Coat zucchini fries by tossing first in flour, shaking off excess, then dipping in beaten eggs, allowing excess to drip off, and finally pressing firmly into breadcrumb mixture. Place coated fries on a parchment-lined baking sheet.
  4. Preheat air fryer to 400°F (200°C) for about 3 minutes.
  5. Lightly spray fries with olive oil spray on all sides. Arrange fries in a single layer in the air fryer basket without overcrowding. Cook for 10-12 minutes, flipping halfway through, until golden and crispy. For multiple batches, keep cooked fries warm in a low oven.
  6. While fries cook, whisk together mayonnaise, sriracha, minced garlic, lime juice, honey, and a pinch of salt in a small bowl. Adjust heat and sweetness to taste.
  7. Serve zucchini fries immediately warm with the spicy sriracha aioli dip.

Notes

Dry zucchini well before coating to prevent sogginess. Use panko breadcrumbs for extra crunch. Spray fries lightly with olive oil spray before air frying to encourage browning. Cook in batches to avoid overcrowding. Flip fries halfway through cooking for even crispiness. The aioli can be made up to 2 days ahead and stored in the fridge. Reheat leftover fries in the air fryer to maintain crispiness; avoid microwaving.
