These mini cheesecakes combine fresh strawberries and a subtle hint of champagne for a creamy, bubbly dessert perfect for Valentine’s Day or any romantic occasion.

Ingredients

Scale
  • 1 cup graham cracker crumbs (about 8 full sheets)
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz (450 g) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • ¼ cup sour cream
  • 3 tablespoons champagne (or sparkling wine)
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons strawberry jam or preserves (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line your mini muffin pan with paper liners.
  2. In a medium bowl, combine graham cracker crumbs, 2 tablespoons sugar, and melted butter. Stir until mixture resembles wet sand.
  3. Press about a teaspoon of crust mixture into the bottom of each liner. Bake for 5 minutes to set, then remove and cool slightly.
  4. In a large bowl, beat softened cream cheese and ½ cup sugar until smooth and creamy (2-3 minutes).
  5. Beat in eggs one at a time, mixing gently to combine without overbeating.
  6. Stir in sour cream, champagne, and vanilla extract until smooth and glossy.
  7. Spoon filling evenly into crust-lined cups, filling almost to the top but leaving space to prevent overflow.
  8. Bake for 18-22 minutes until centers are slightly jiggly but mostly set. A toothpick near the edge should come out clean.
  9. Cool completely on a wire rack for about 30 minutes, then refrigerate for at least 4 hours or overnight.
  10. Before serving, spread a thin layer of strawberry jam on top, arrange fresh strawberry slices, and garnish with mint leaves if desired.

Notes

Use room temperature cream cheese and eggs to avoid lumps. Tap the filled muffin pan gently before baking to release air bubbles. Avoid opening the oven door during baking to prevent cracks. Chill overnight for best texture and flavor. Substitute champagne with sparkling white grape juice or non-alcoholic sparkling wine if desired. For gluten-free crust, use almond flour mixed with melted butter. For dairy-free, use coconut cream and cream cheese alternatives.
