A rich and creamy buffalo chicken dip slow-cooked to perfection, blending spicy buffalo sauce with tangy blue cheese for a bold and comforting party snack.

Ingredients

Scale
  • 3 cups cooked shredded chicken (rotisserie or leftover grilled chicken)
  • 1 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 8 ounces cream cheese, softened
  • 4 ounces crumbled blue cheese
  • ½ cup sour cream
  • ½ cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon freshly ground black pepper
  • Optional garnish: sliced green onions or chopped fresh parsley

Instructions

  1. Prepare the chicken by shredding about 3 cups of cooked chicken.
  2. In a medium bowl, combine softened cream cheese, sour cream, ranch dressing, buffalo hot sauce, garlic powder, onion powder, and black pepper. Stir until smooth and well blended.
  3. Fold in crumbled blue cheese and shredded cheddar cheese.
  4. Add shredded chicken to the cheese mixture and stir until evenly coated.
  5. Pour the mixture into the slow cooker and spread evenly. Cover with the lid.
  6. Cook on low for 2 to 2½ hours or on high for 1 to 1½ hours. Check at 2 hours for bubbling edges and creamy center, stirring to heat evenly.
  7. Optional: Transfer to an oven-safe dish and broil for 2-3 minutes for a bubbly, golden top.
  8. Garnish with sliced green onions or parsley and serve warm with celery sticks, tortilla chips, or toasted baguette slices.

Notes

Soften cream cheese before mixing to ensure smooth texture. Check slow cooker at 2 hours to avoid burning. Adjust buffalo sauce for desired heat level. If dip is too thick after cooking, stir in a tablespoon of milk or more hot sauce; if too thin, add more shredded cheese and cook uncovered for 15 minutes. Use a slow cooker liner for easier cleanup. Can be made on stovetop or baked in oven as alternatives.
