  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons (30g) dark chocolate chips (at least 70% cacao)
  • Pinch of salt

Instructions

  1. Mash the banana in a mixing bowl with a fork until mostly smooth but slightly chunky (about 2 minutes).
  2. Add peanut butter to milk and whisk or stir vigorously until fully incorporated and smooth (2-3 minutes).
  3. Stir in rolled oats and chia seeds to the peanut butter and milk mixture.
  4. Mix in Greek yogurt, honey or maple syrup (if using), vanilla extract, and a pinch of salt (1-2 minutes).
  5. Gently fold in dark chocolate chips evenly.
  6. Pour the mixture into a mason jar or airtight container, leaving some space at the top.
  7. Seal and refrigerate for at least 6 hours or overnight to allow oats and chia seeds to soak and flavors to meld.
  8. In the morning, stir the oats well before serving chilled or warm gently with a splash of milk if preferred. Optionally top with banana slices or chopped nuts.
