  • 2 boneless, skinless chicken breasts (about 1 lb / 450 g), sliced or pounded thin
  • 8 ounces (225 g) pasta of your choice (penne or fettuccine recommended)
  • ½ cup (120 ml) sun-dried tomatoes packed in oil, roughly chopped
  • 1 cup (240 ml) heavy cream
  • ½ cup (120 ml) chicken broth
  • 3 cloves garlic, minced
  • ½ medium yellow onion, finely chopped
  • ½ cup (50 g) freshly grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon butter
  • A handful fresh basil, chopped (optional)
  • Salt and pepper to taste
  • A pinch of red pepper flakes (optional)

Instructions

  1. Pat the chicken breasts dry, then slice into thin strips or pound to about ½ inch thickness. Season generously with salt and pepper.
  2. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente (8-10 minutes). Drain, reserving ½ cup pasta water.
  3. Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Push aromatics to the side of the skillet and add chicken strips. Cook on medium-high heat until golden and cooked through, about 4-5 minutes per side.
  5. Reduce heat to medium. Add chopped sun-dried tomatoes and stir to combine. Pour in chicken broth and simmer for 2 minutes.
  6. Stir in heavy cream and butter, stirring constantly. Let sauce bubble and thicken for about 5 minutes, adding reserved pasta water as needed to adjust consistency.
  7. Stir in grated Parmesan until melted and smooth. Adjust seasoning with salt, pepper, and red pepper flakes if desired. Toss in fresh basil.
  8. Add drained pasta to the skillet and gently toss to coat in sauce. Warm through for 2 minutes, adding more pasta water if sauce is too thick.
  9. Serve immediately, garnished with extra Parmesan and basil.

Do not rush the sauce thickening; simmer gently and stir often to avoid curdling. Reserve pasta water to loosen sauce if needed. Use sun-dried tomatoes packed in oil for best flavor. Thinly sliced or pounded chicken cooks quickly and stays juicy. This recipe is flexible for substitutions like gluten-free pasta or dairy-free cream alternatives.
