Instructions

  1. Toss the sliced strawberries with granulated sugar and lemon juice in a bowl. Let them sit for at least 10 minutes to macerate and release their natural juices.
  2. In a chilled mixing bowl, beat the mascarpone with powdered sugar and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. Gently fold the whipped cream into the mascarpone mixture using a spatula, being careful not to overmix.
  5. Cube the sponge cake into roughly 1-inch pieces. If dry, sprinkle with a tablespoon of strawberry juice or a little milk to moisten.
  6. Layer the trifle starting with 1/3 of the cake cubes at the bottom of a trifle bowl or individual glasses.
  7. Spoon a generous layer of mascarpone cream over the cake.
  8. Add a layer of macerated strawberries, including some juice.
  9. Repeat layering two more times, finishing with mascarpone cream on top.
  10. Cover and refrigerate the trifle for at least 1 hour to let flavors meld and cream firm up.
  11. Before serving, garnish with fresh mint leaves and toasted almonds or crushed shortbread for texture.
