  • ½ cup (120 ml) milk (whole milk recommended; skim or plant-based like oat or almond milk can be used)
  • 2 tablespoons pumpkin puree (pure pumpkin, not pie filling)
  • 1 tablespoon maple syrup or honey (adjust to taste)
  • ½ teaspoon pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Pour 1 cup (240 ml) of cold brew coffee into your serving glass or jar. Add a splash of milk or sweetener if desired and stir gently.
  2. In a mixing bowl or jar, combine ½ cup (120 ml) of milk with 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, ½ teaspoon pumpkin pie spice, ½ teaspoon vanilla extract, and a pinch of salt.
  3. Use a milk frother or handheld mixer to whip the pumpkin-milk blend until thick, creamy, and airy, about 1-2 minutes, until soft peaks form.
  4. Slowly spoon or pour the pumpkin cold foam over the cold brew coffee, allowing it to float on top.
  5. Optionally sprinkle a little extra pumpkin pie spice or cinnamon on top before serving.

Notes

Use cold milk straight from the refrigerator for best frothing results. Froth in short bursts to avoid overheating. If foam separates, whisk again before serving. Pumpkin puree should be plain, not pie filling. The foam is best served fresh and cold. Store pumpkin cold foam covered in the fridge up to 4 hours and re-whisk before use.
