  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 4 oz (115 g) garlic & herb Boursin cheese
  • 1 cup fresh spinach, roughly chopped (optional)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • ½ cup (120 ml) chicken broth
  • ¼ cup (60 ml) heavy cream
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat chicken breasts dry and slice horizontally to create a pocket without cutting all the way through.
  3. Season inside and outside the pockets with salt, pepper, and Italian seasoning.
  4. In a bowl, combine Boursin cheese, chopped spinach, and minced garlic.
  5. Stuff each chicken breast pocket with the cheese mixture, pressing gently to keep filling inside.
  6. Heat olive oil in a skillet over medium-high heat and sear chicken breasts for 3-4 minutes per side until golden brown.
  7. Remove chicken and reduce heat to medium. Add chicken broth to the skillet, scraping up browned bits.
  8. Stir in heavy cream and Parmesan cheese, simmer for 2-3 minutes until sauce thickens slightly.
  9. Return chicken breasts to the skillet, spoon sauce over them, and transfer skillet to the oven.
  10. Bake for 15-20 minutes or until internal temperature reaches 165°F (74°C).
  11. Let chicken rest for 5 minutes before serving. Spoon additional sauce over the top.

Notes

If you don’t have an oven-safe skillet, transfer seared chicken to a baking dish before finishing in the oven. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Add a splash of broth or cream if sauce thickens too much. Let chicken come to room temperature before cooking for even results.
