Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with 1/2 cup brown sugar, 1/4 cup granulated sugar, 1 tablespoon fresh lemon juice, 1 teaspoon ground cinnamon, 1 teaspoon vanilla extract, 2 tablespoons cornstarch, and a pinch of salt until every peach slice is coated.
  3. Transfer the peach filling to your skillet and spread evenly in a single layer.
  4. In a medium bowl, whisk together 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon baking soda, 1/2 teaspoon salt, and 2 tablespoons brown sugar.
  5. Add the cold cubed butter and use a pastry cutter or fingertips to work it into the flour until the mixture resembles coarse crumbs with pea-sized bits.
  6. Pour in 3/4 cup buttermilk and stir gently with a fork just until the dough comes together; do not overmix.
  7. Drop biscuit dollops evenly over the peach filling using a spoon or spatula, leaving gaps for the fruit to peek through.
  8. Bake uncovered for 35-40 minutes until the biscuit topping is golden and the peach juices are thick and bubbly. Tent with foil if the top browns too fast.
  9. Cool for at least 15 minutes before serving to allow the filling to thicken and the skillet to cool.
