  • 1 cup fresh basil leaves, loosely packed and roughly chopped
  • 4 large garlic cloves, unpeeled
  • 3 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 cups vegetable or chicken broth
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¾ cup shredded Parmesan cheese
  • 4 cups cubed day-old rustic bread
  • ½ teaspoon dried oregano (optional)
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Place quartered heirloom tomatoes and unpeeled garlic cloves on the baking sheet. Drizzle 2 tablespoons olive oil over them, sprinkle with a pinch of salt and pepper, and toss gently to coat.
  3. Roast in the oven for 30-35 minutes until tomatoes are caramelized and soft, and garlic is fragrant and tender.
  4. While roasting, heat 1 tablespoon olive oil in a large pot over medium heat. Add chopped onion and a pinch of salt. Cook for about 8 minutes until translucent and slightly golden, stirring occasionally.
  5. Peel the roasted garlic cloves and add them along with the roasted tomatoes to the pot with the onions.
  6. Add the broth and bring to a simmer. Cook gently for 10 minutes to meld flavors.
  7. Stir in fresh basil just before blending to preserve its brightness.
  8. Puree the soup using an immersion blender until smooth and creamy. If using a regular blender, blend in batches carefully.
  9. Adjust seasoning with salt and pepper to taste. Add more broth or water if the soup is too thick.
  10. To make parmesan croutons, toss bread cubes with melted butter, shredded parmesan, dried oregano, and a pinch of salt in a mixing bowl.
  11. Spread croutons evenly on a baking sheet and bake at 375°F (190°C) for 10-15 minutes until golden and crispy, tossing halfway through.
  12. Serve the soup hot topped with parmesan croutons and garnish with fresh basil leaves if desired.
