  • 1/4 cup granulated sugar
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon

  • 1 tablespoon fresh lemon juice
  • 3 tablespoons unsalted butter, cut into small cubes
  • 1 sheet ready-made refrigerated pie dough (or gluten-free almond flour crust for gluten-free option)
  • 1/2 teaspoon vanilla extract
  • Optional: 1 tablespoon cornstarch to thicken filling
  • Optional: turbinado sugar for sprinkling on top
  • Optional: cinnamon stick for decoration

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Peel, core, and chop apples into 1/2 inch cubes. Toss with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch if using. Mix gently but thoroughly.
  3. Roll out pie dough on a lightly floured surface to about 1/8 inch thick. Cut circles about 3 inches in diameter to cover jar openings.
  4. Spoon apple mixture evenly into each mini mason jar, filling about 3/4 full. Dot the top with small cubes of butter (about 1/2 tablespoon per jar).
  5. Place a pie dough circle over each jar opening. Press edges to seal and crimp decoratively. Cut a small slit or poke holes in the dough to vent steam.
  6. Lightly brush dough tops with melted butter or egg wash (1 egg beaten with 1 tablespoon water). Sprinkle with turbinado sugar if desired.
  7. Place jars on the prepared baking sheet and bake for 30-35 minutes until crust is golden and filling is bubbling. Check after 25 minutes to avoid over-browning; tent with foil if needed.
  8. Let jars cool on a wire rack for at least 30 minutes before sealing with lids to prevent condensation and soggy crust.

Notes

Use a mix of tart and sweet apples for best flavor. Do not overfill jars to prevent overflow. Vent the crust tops to avoid soggy crust or bursting. Cool jars before sealing to keep crust crisp.
