  • 3 stalks green onions, thinly sliced
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 tsp chili powder
  • 1/4 tsp black pepper
  • 1 large bag (about 12 oz) sturdy corn tortillas, cut into wedges for scoops
  • Optional toppings: diced jalapeños, chopped cilantro, hot sauce

Instructions

  1. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, shredded Monterey Jack, and sour cream. Mix until smooth and creamy (2-3 minutes).
  2. Stir in ground cumin, garlic powder, chili powder, and black pepper.
  3. Pour in the entire can of chili and stir gently to combine evenly.
  4. Spray crockpot with non-stick cooking spray or lightly grease with butter.
  5. Transfer mixture to crockpot and cook on low for 2-3 hours, stirring every 30-45 minutes until cheese is melted and bubbly.
  6. While dip cooks, preheat oven to 375°F. Cut corn tortillas into wedges (about 6 per tortilla). Arrange on baking sheet, lightly spray with oil, sprinkle with salt, and toast for 8-12 minutes, flipping halfway through until golden and crisp.
  7. Once dip is melted and bubbly, stir in sliced green onions. Add optional diced jalapeños or chopped cilantro if desired.
