Ingredients

Scale
  • 8 large cinnamon rolls (store-bought like Pillsbury or homemade, cut into halves or quarters)
  • 6 large eggs (room temperature)
  • 2 cups whole milk (480 ml; can substitute almond or oat milk for dairy-free option)
  • 1 cup heavy cream (240 ml)
  • ⅓ cup granulated sugar (65 g)
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • For the Vanilla Glaze:
  • 1 cup powdered sugar (120 g)
  • 2 tbsp unsalted butter, melted
  • 23 tbsp whole milk (or dairy-free milk)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the cinnamon rolls into halves or quarters and spread them evenly in a greased 9×13-inch baking dish.
  3. In a large bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until smooth.
  4. Pour the custard evenly over the cinnamon rolls and press down gently with a spatula to help the rolls soak up the custard.
  5. Let the dish rest for at least 15 minutes at room temperature or cover and refrigerate overnight for a deeper custard soak.
  6. Bake uncovered for 45-50 minutes until the top is golden brown and a knife inserted in the center comes out clean or with a few moist crumbs.
  7. While baking, prepare the vanilla glaze by whisking powdered sugar, melted butter, vanilla extract, and milk until smooth and pourable.
  8. Remove the bake from the oven and let it cool for 10-15 minutes to allow the custard to set.
  9. Drizzle the vanilla glaze generously over the warm cinnamon roll french toast bake and serve immediately.

Notes

If edges brown too quickly, tent loosely with foil halfway through baking. For a deeper custard soak, refrigerate overnight. Use room temperature eggs and dairy for even baking. Let the bake cool before glazing to prevent glaze from melting off. Variations include gluten-free cinnamon rolls, dairy-free milk and cream substitutes, adding nuts or fruit, or using a slow cooker on low for 3-4 hours.
