  • ¾ cup granulated sugar (150g)
  • ¼ cup packed brown sugar (about 50g)
  • ½ cup unsalted butter, melted (113g)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup plain Greek yogurt (120ml)
  • 2 medium apples, peeled, cored, and diced (preferably Granny Smith)
  • ¼ cup all-purpose flour (30g) for streusel
  • ¼ cup packed brown sugar (50g) for streusel
  • 1 teaspoon ground cinnamon for streusel
  • 3 tablespoons cold unsalted butter, cubed for streusel
  • 1 cup powdered sugar (120g) for glaze
  • 2 tablespoons milk (30ml), whole or dairy-free alternative for glaze
  • ½ teaspoon vanilla extract for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan well with butter or non-stick spray.
  2. Prepare the cinnamon streusel: In a small bowl, mix ¼ cup flour, ¼ cup brown sugar, and 1 teaspoon cinnamon. Add cold cubed butter and crumble until coarse crumbs form. Refrigerate until ready to use.
  3. In a large mixing bowl, whisk together 2 cups flour, baking powder, baking soda, salt, and 1 tablespoon cinnamon.
  4. In another bowl, beat together granulated sugar, brown sugar, melted butter, eggs, vanilla extract, and Greek yogurt until smooth and slightly thick.
  5. Fold the wet ingredients into the dry mixture gently until just combined; avoid overmixing.
  6. Fold in the diced apples gently.
  7. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the cinnamon streusel evenly over the top.
  8. Bake for 50-60 minutes, checking doneness with a toothpick inserted in the center; it should come out clean or with a few moist crumbs. Tent with foil if streusel darkens too quickly.
  9. While baking, whisk together powdered sugar, milk, and vanilla extract to make the vanilla glaze. Adjust consistency with more milk if needed.
  10. Cool the loaf in the pan for about 15 minutes, then remove to a cooling rack.
  11. Drizzle the vanilla glaze over the warm bread and let set for 10 minutes before slicing and serving.

Notes

Keep butter cold for the streusel to achieve crumbly texture. Avoid overmixing the batter to prevent toughness. If apples are very juicy, toss them lightly in a teaspoon of flour before folding in to avoid soggy spots. Tent the loaf with foil if streusel browns too fast. Let the bread cool slightly before glazing to prevent glaze from melting off.
