A quick and easy cowboy caviar dip featuring black beans, fresh veggies, and a zesty lime jalapeño dressing, perfect for snacks or parties.

  • 1 can (15 oz / 425 g) black beans, rinsed and drained
  • 1 cup (150 g) fresh corn kernels (or frozen, thawed)
  • 1 cup (150 g) cherry tomatoes, quartered
  • 1/2 cup (75 g) red bell pepper, diced
  • 1/4 cup (40 g) red onion, finely chopped
  • 1/4 cup (35 g) fresh cilantro, roughly chopped
  • 1 jalapeño, seeded and minced
  • Juice of 2 limes (about 1/4 cup / 60 ml)
  • 2 tablespoons (30 ml) olive oil (extra virgin)
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 teaspoon honey or agave syrup
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • 1 bag (about 10 oz / 280 g) sturdy corn tortilla chips

Instructions

  1. Rinse and drain the black beans thoroughly. Quarter the cherry tomatoes, dice the red bell pepper, finely chop the red onion, roughly chop the cilantro, and mince the jalapeño, removing seeds if desired.
  2. In a small bowl or jar, combine fresh lime juice, olive oil, apple cider vinegar, honey, minced garlic, ground cumin, salt, and pepper. Whisk or shake well until fully blended and slightly emulsified.
  3. Add the black beans, corn, tomatoes, red pepper, onion, cilantro, and jalapeño into a large bowl. Pour the dressing over the top and gently toss everything until evenly coated, being careful not to mash the beans or tomatoes.
  4. Taste and adjust seasoning with salt, pepper, or extra lime juice as needed. Optionally add a pinch of sugar or more honey to balance tartness.
  5. Serve immediately or chill in the refrigerator for 15-20 minutes to let flavors meld.
  6. Spoon the cowboy caviar dip into a wide shallow bowl and serve with sturdy corn tortilla chips.

Use fresh lime juice for best flavor. Rinse and drain beans well to avoid sogginess. Mince garlic and jalapeño finely for balanced heat. Chill dip for 15-20 minutes to meld flavors. Use sturdy corn chips to prevent breaking. Dressing can be made ahead and stored up to 3 days refrigerated.
