  • 1 cup brown sugar, packed
  • 1/2 cup bourbon
  • 1 can pineapple rings or fresh equivalent
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • Maraschino cherries (optional, for garnish)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Remove the packaging and pat the ham dry with paper towels. If not spiral-sliced, score the surface in a diamond pattern about 1/4 inch deep.
  3. In a small saucepan over medium heat, combine brown sugar, bourbon, Dijon mustard, apple cider vinegar, ground cloves, ground cinnamon, and unsalted butter. Stir occasionally until sugar dissolves and glaze thickens slightly, about 5-7 minutes.
  4. Place the ham on a rack in a roasting pan. Arrange pineapple rings on top, tucking them into the scored diamonds if applicable. Secure pineapple rings with toothpicks if needed.
  5. Brush the ham generously with the bourbon glaze using a basting brush.
  6. Roast the ham uncovered for about 1 1/2 to 2 hours (15-18 minutes per pound), basting every 20-30 minutes with reserved glaze. Watch to prevent burning.
  7. Check internal temperature with a meat thermometer to ensure it reaches 140°F (60°C).
  8. During the last 10 minutes, brush on a final layer of glaze for a glossy finish. Optionally, place maraschino cherries in the center of each pineapple ring.
  9. Remove the ham from the oven and let it rest for 10-15 minutes before carving.
  10. Slice and serve warm with your favorite sides.

Notes

If the glaze starts to get too dark during roasting, tent the ham loosely with foil to prevent burning while keeping it moist. Basting every 20-30 minutes is key to a sticky, caramelized crust. Use a good-quality bourbon for best flavor. Score the ham if not spiral-sliced to help glaze soak in. Rest the ham before slicing to keep it juicy.
