  • Cinnamon sugar topping: 1/4 cup granulated sugar mixed with 2 tsp ground cinnamon

Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt the unsalted butter. Stir frequently as it foams and begins to brown (about 5-7 minutes). Remove from heat immediately and let cool slightly.
  2. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease with nonstick spray.
  3. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. Grate the apple and set aside.
  5. Combine wet ingredients: In a separate bowl, whisk eggs until smooth, then stir in browned butter, apple cider, and vanilla extract.
